Розробка організаційно-проєктних рішень ресторану класу «Люкс» грузинської кухні на 160 посадкових місць

Abstract

Роботу присвячено проєктуванню закладу ресторанного господарства, дослідженню перспектив розвитку ресторанного бізнесу в Україні. Висвітлено основну концепцію закладу, розроблено концептуальне меню, запровадження інноваційного електронного меню, проведено аналіз конкурентів. Підібрано необхідне устаткування та обладнання та створено структурно-технологічну схему цехів.The work is devoted to the design of a restaurant establishment, the study of prospects for the development of the restaurant business in Ukraine. The main concept of the establishment was highlighted, a conceptual menu was developed, an innovative electronic menu was introduced, and an analysis of competitors was conducted. The necessary equipment and facilities were selected and a structural and technological diagram of the workshops was created.
