Підвищення конкурентоспроможності ресторану на основі впровадження Lean-технологій (на прикладі ресторану Mister Twister)

Abstract

Кваліфікаційна робота присвячена дослідженню особливостей підвищення конкурентоспроможності закладів ресторанного типу на основі впровадження Lean-технологій. Проаналізовано теоретичні аспекти сутності конкурентоспроможності та факторів що на її впливають у ресторанному бізнесі. Досліджено переваги використання Lean-технологій в ресторанному бізнесі. Проаналізовано діяльність ресторану Mister Twister на ринку міста Києва та оцінено його конкурентоспроможність. Визначено напрями підвищення конкурентоспроможності ресторану Mister Twister на основі впровадження Lean технологій та оцінено їх ефективність.The qualification work is devoted to the study of the features of increasing the competitiveness of restaurant-type establishments through the introduction of Lean technologies. The theoretical aspects of the essence of competitiveness and factors influencing it in the restaurant business are analyzed. The advantages of using Lean technologies in the restaurant business are investigated. The activity of Mister Twister restaurant in the Kyiv market is analyzed and its competitiveness is evaluated. The directions of increasing the competitiveness of the Mister Twister restaurant on the basis of introduction of Lean technologies are determined and their effectiveness is evaluated.
