Abstract

Тема роботи: розробка технології отримання казеїнів з молозива та методів їх контролю. Мета роботи: характеристика казеїнів їх біологічних функцій та способів застосування, розгляд та аналіз методів виділення казеїнів. Об’єкти дослідження: казеїни молока та молозива. Результати: охарактеризовано властивості казеїнів та їх будову, розглянуто варіанти застосування казеїнів як біоактивних сполук. Проаналізовано методи ви- значення біологічної активності казеїнів, їх кількісного визначення та виділення.Work topic: development of technology for obtaining caseins from colostrum and methods of their control. The purpose of the work: characterization of caseins, their biological functions and methods of application, review and analysis of casein isolation methods. Research objects: caseins of milk and colostrum. Results: the properties of caseins and their structure were characterized, options for the use of caseins as bioactive compounds were considered. The methods of determining the biological activity of caseins, their quantitative determination and isolation are analyzed.
